Ten-Minute Microwave Brownies

Years ago, I clipped this out so I don’t know who authored it.  It’s a fast and easy dessert to make.  You’ll have to play with cooking times to get it right.

INGREDIENTS
2 large eggs
1/4 C unsalted butter, melted, cooled
1 tsp vanilla extract
3/4 to 1 C granulated sugar
1/2 C unsweetened cocoa powder
1/2 C all-purpose flour
1/3 C semisweet or white chocolate chips*
1/3 C coarsely chopped macadamia or walnuts, optional
2 oz. pureed spinach**
*I used peanut butter chips
**In the spirit of being a sneaky chef (or a deceptively delicious cook) I added the spinach. It wasn’t noticeable.

DIRECTIONS
Spray an 8-inch square glass baking dish with non-stick spray or butter lightly.
Whisk eggs, cooled butter and vanilla in a large bowl to blend.
Add sugar, cocoa and flour, blended well.
Stir in chocolate chips and nuts.
Cook uncovered in microwave oven on high until tester inserted in the centre comes out clean, about 5-8 minutes.
Cool 5 minutes, cut into squares.
Devour.
