This was a hit in the household! Clean Eating served it with a Turnip-Cauliflower Mash, but since I had fresh green beans from my garden, I used them. I’ve included their Turnip-Cauliflower Mash ingredients and directions.
1 lb lean Ground Turkey
1 cup onion, diced
3/4 cup uncooked oatmeal
1/2 cup carrots, grated
2 egg whites, whisked
2 tsp Italian seasoning, divided
1/8 tsp cayenne pepper
6 oz canned tomato paste
2 tbsp apple cider vinegar
1 garlic clove, mashed
1 tsp agave nectar
1 head cauliflower, leaves removed and cut into pieces
2 turnips, skin removed and cut into 1/4-inch pieces
2 tsp extra-virgin olive oil
1 tbsp fresh basil, finely minced (or 1 tsp dried basil)
Sea salt and fresh ground pepper, to taste
Preheat oven to 350 degrees.
In a medium bowl, combine turkey, onion, oatmeal, egg whites, 1 tsp seasoning, and cayenne. Place mixture in a 9-inch loaf pan.
In another bowl, whisk together tomato paste, vinegar, garlic, 1 tsp seasoning and agave nectar. Spread mixture over meatloaf. Bake 45-50 minutes.
Steam cauliflower pieces for 15 minutes over medium-high heat. Place turnips (skin removed, cut into 1/4 pieces) in a medium size pan with water and bring to a boil, Boil turnips for 20 minutes.
In a large bowl, mash together turnips and cauliflower, oil, basil, salt and pepper.
